Preheat the oven to 200 °C (180 °C fan) and have a baking tray ready. This way the patties and vegetables will cook evenly later.
Peel the onion and dice it very finely. Beat the egg in a large bowl.
Mix the turkey mince with the onion and egg and season with salt and pepper. With slightly damp hands, shape the mixture into even patties.
Cut the pepper and courgette into bite-sized pieces and toss with the olive oil. Spread the vegetables on the baking tray together with the patties.
Bake everything in the oven at 200 °C for 20–25 min, until the patties are cooked through and the vegetables have golden-brown edges. Turn the vegetables once if needed so they roast evenly.
Serve the turkey patties and roasted vegetables hot, straight from the tray.
Good to know
When you want something uncomplicated, this traybake is wonderfully forgiving. The patties stay juicy and the vegetables pick up lovely roasted flavours. Something solid on the table without much effort.
Swaps
Turkey mince → chicken mince (similar protein content and usually a little milder in flavour); courgette → broccoli (also provides fibre and vitamin C); pepper → carrots (provide beta-carotene); olive oil → avocado oil (heat-stable, mainly monounsaturated fatty acids).
Allergens
The recipe contains egg as an allergen. It's good for children as long as the patties are cooked right through, and in pregnancy this applies all the more to poultry mince.
