Ingredients

Method

You’ll need: microwave · frying pan · chopping board · knife · mixing bowl

  1. Scoop the avocado out of its skin and mash it in a bowl with the natural yoghurt, crushed garlic and lemon or lime juice. Season to taste with salt and pepper.
  2. Cut the chicken breast into strips and fry in the ghee in a frying pan until cooked through and lightly browned. Season with salt, pepper and sweet paprika.
  3. Halve or chop the tomatoes, and wash the lettuce and pat it dry. Warm the wholemeal wraps briefly in the frying pan or microwave so they soften.
  4. Spread each wrap with the avocado cream and top with lettuce and tomatoes. Arrange the fried chicken on top.
  5. Fold up the bottom of the wrap and roll the sides tightly towards the middle. That way the filling holds together well.
  6. Cut the wraps in half diagonally and serve straight away. A little extra lime juice or freshly ground pepper goes well with them.

Good to know

When it needs to be quick but can still be fresh and substantial, these wraps are just right. Creamy, well seasoned and pleasantly uncomplicated.

Swaps

Chicken breast fillet → turkey breast fillet (similar protein content, usually a little leaner) Wholemeal tortilla wraps → large romaine lettuce or cabbage leaves (far fewer processed carbs, fresher) Thick natural yoghurt → Greek yoghurt or skyr (more protein, extra creamy) Ghee → olive oil or grass-fed butter (full of flavour)

Allergens

Contains milk (yoghurt, ghee) and gluten (wholemeal wraps). Usually fine for children; in pregnancy, the chicken should be cooked right through.

Frequently asked questions

What's in avocado nutritionally?

Avocado mainly provides monounsaturated fats, fibre, folate and potassium. Its exact composition varies a little with ripeness.

What nutrients do tomatoes bring to the wraps?

Tomatoes contain vitamin C, potassium and carotenoids, especially lycopene. The lycopene content can vary with variety and ripeness.

Is the yoghurt in the avocado cream OK if you're sensitive to lactose?

Natural yoghurt often contains a little less lactose than milk, and many people are fine with it. With lactose intolerance, it can still cause symptoms.

Why are wholemeal wraps interesting nutritionally?

Wholegrain provides more fibre, and usually more magnesium and B vitamins, than highly refined flour. How much is actually in them depends on the product.

Does garlic agree with everyone?

Not with everyone. Garlic contains sulphur compounds, and in people with a sensitive stomach or IBS it can cause wind.
