Ingredients

Method

You’ll need: saucepan · chopping board · knife · sieve · wooden spoon · ladle

  1. Dice the onion, chop the garlic and slice the jalapeños into thin rings. Remove the seeds if you like it milder.
  2. Soften the onion, garlic and jalapeños in the olive oil in a pan for 3 min. Stir in the cumin and oregano and toast them for 30 seconds.
  3. Put the whole chicken breasts in the pan, pour in the chicken stock and simmer, covered, for 15 min until the chicken is cooked.
  4. Take out the chicken and pull it into shreds with two forks. Drain the beans and sweetcorn, add them to the pan and mash a quarter of the beans against the side of the pan.
  5. Stir in the cream cheese, return the chicken and simmer the chilli uncovered for 5 min until thick and creamy. Season with lime juice and salt.
  6. Serve the chilli with diced avocado and chopped coriander.

Good to know

White chilli without tomatoes was one of the most searched recipes on Google in 2025. Instead of beef mince, it has pulled chicken, and cream cheese and mashed beans make it creamy. One pot, done.

Swaps

Chicken breast → turkey breast (same cooking time). Cream cheese → skyr, stirred in only at the end (a little more protein). Jalapeños → green pepper (for kids). Cannellini beans → chickpeas.

Cooking tips

Cooked whole, chicken breast stays juicier than when diced. Mashed beans thicken the chilli without flour.

Storage

The chilli keeps for 3 days in the fridge and, without the avocado, can be frozen for 3 months.

Allergens

Contains milk; no gluten, egg or nuts if the stock is gluten-free. Mild enough for kids without the jalapeños.
