Ingredients

Method

You’ll need: frying pan · chopping board · knife

  1. Pat the chicken breast dry and cut it into even cubes. That way the skewers cook evenly later.
  2. Stir the coconut milk with the turmeric, grated ginger, finely chopped garlic, ground coriander, sea salt and black pepper to make a smooth marinade.
  3. Mix the chicken cubes thoroughly with the marinade and leave to marinate in the fridge for at least 30 min. A little time makes the flavour rounder.
  4. Thread the marinated chicken onto skewers. Heat a frying pan or griddle until very hot and add the ghee or coconut oil.
  5. Fry or grill the skewers on all sides until the meat is golden and cooked all the way through. Let them rest briefly so they stay juicy.
  6. Serve hot, or cooled with a fresh salad, cucumber or herb quark.

Good to know

These skewers are quick to make but still taste like something special. Warmly spiced, juicy and pleasantly simple. Still really good cold, too.

Swaps

Chicken breast → turkey breast (similar protein content, a little more flavour); ghee → olive oil (more monounsaturated fats); coconut milk → plain Greek yoghurt (more protein, tangier); fresh ginger → galangal (similarly spicy, with different aromatic compounds).

Allergens

If you use ghee, it contains traces of milk components; coconut is usually well tolerated but matters for some people. For children, season mildly; in pregnancy, make sure everything is cooked through and the kitchen is kept clean. Contains: milk.

Frequently asked questions

Why add black pepper to turmeric?

Black pepper contains piperine, which gives it its heat. Its sharpness balances the earthy, slightly bitter taste of turmeric.

What's in ginger, nutritionally?

Ginger contains essential oils and pungent compounds such as gingerols. It also has small amounts of potassium and other plant compounds.

Can garlic cause problems for a sensitive gut?

It can. Garlic contains fructans, which some people tolerate well while others react to them, especially if they have a sensitive gut.

What kind of fat is in coconut milk?

Coconut milk mainly provides saturated fats, including medium-chain fatty acids. It suits marinades well in flavour, but nutritionally it's something different from olive oil or avocado oil.

Which micronutrients does chicken breast provide?

Chicken breast contains niacin, vitamin B6, phosphorus and selenium. These nutrients occur naturally in the meat and are largely retained with gentle cooking.
