Wash the pepper and courgettes and cut both into bite-sized pieces. Cut the turkey breast into strips on a separate board.
Heat the olive oil in a large frying pan over a medium heat. Brown the turkey breast all over until lightly coloured.
Peel the garlic, chop it finely and add it to the pan with the pepper and courgettes. Fry everything briefly, stirring regularly.
Season with paprika, salt and pepper. Keep cooking until the vegetables are soft but still have a little bite and the turkey is cooked through.
Taste and adjust the seasoning, then take the pan off the hob. Let the dish rest for a moment so the flavours come together.
To serve, roughly crumble the feta and scatter it over the hot turkey and veg.
Good to know
This is the kind of meal I like on long days: quick to make and no fuss. Warm, full of flavour and exactly the sort of pan dish that reliably makes it to the table.
Swaps
Turkey breast → chicken breast (similar protein content); feta → cottage cheese (also contains protein, milder in flavour); pepper → broccoli (also provides fibre and folate); olive oil → avocado oil (heat-stable, mainly monounsaturated fats)
Allergens
Contains milk (feta). Usually good for children if mildly seasoned and cut small. In pregnancy, fine as long as the feta is made from pasteurised milk and the turkey is cooked right through.
