Rinse the quinoa in a fine sieve under hot water and cook it in lightly salted water for about 15 minutes until soft. Cut the lean turkey breast into small cubes and wash the courgette before cutting it into thick slices. Heat the olive oil in a very large frying pan and fry the meat over a high heat until golden brown on all sides. Add the courgette slices and dried oregano and fry the veg with it for five minutes, until slightly softened. Fold the cooked quinoa into the meat and veg, toss everything well and serve the dinner hot. Good to know Quinoa isn't just for salads – it also makes a great base for warm pan-fries. The turkey brings lean protein.
Swaps Quinoa → millet (a local alternative that looks similar and behaves almost the same when cooked).
Cooking tips To keep turkey breast from drying out in the pan, don't cut it too small. Larger cubes stay much juicier inside.
Storage The dish reheats really well the next day in the microwave or a frying pan, and makes an ideal office lunch.
