Ingredients

Method

You’ll need: casserole dish · chopping board · knife · wooden spoon · ladle

  1. Cut the turkey breast into rough pieces. Cut the pepper and onion into larger pieces.
  2. Heat the olive oil in a casserole dish. Fry the onion and turkey breast until the meat takes on a little colour on the outside.
  3. Add the tomato purée and fry it briefly with the rest. This makes the flavour rounder and stronger.
  4. Pour in a little water and add the pepper. Cover and let everything simmer gently over a low heat for 10–15 minutes.
  5. Let the goulash cook until the turkey breast is done and the sauce thickens slightly. Stir briefly now and then so everything comes together.
  6. Serve the high-protein turkey and pepper goulash hot, straight from the casserole dish.

Good to know

A goulash like this is just the thing when you want something simple but filling. It's hearty, warm and on the table with little effort.

Swaps

Turkey breast → chicken breast (similar protein content). Pepper → courgette (a little milder). Olive oil → ghee (stable when heated, for frying). Tomato purée → chopped tomatoes with nothing added (a bit more volume and liquid).

Allergens

The recipe is naturally free from gluten, egg and milk. Onion can sometimes be a bit much for sensitive children's tummies, and the dish is fine during pregnancy as long as the turkey breast is cooked all the way through.
