Ingredients

Method

You’ll need: frying pan · chopping board · knife · mixing bowl · grater

  1. Finely grate the courgette, put it in a clean tea towel and squeeze it out thoroughly. That way the mixture won't be too wet later.
  2. Finely chop the onion and garlic and roughly crumble the feta. Mix everything with the turkey mince, courgette, egg and oregano in a large bowl.
  3. Season the mixture with salt and pepper and knead briefly but thoroughly. Then shape into even, flat patties.
  4. Heat the olive oil in a large frying pan and fry the patties over a medium heat. Fry on both sides until golden brown and cooked right through.
  5. Leave the patties to rest briefly after frying. That way they stay juicier inside.
  6. Serve with a fresh salad, roast veg or a dollop of yoghurt.

Good to know

Juicy, well seasoned and pleasantly uncomplicated. Exactly the kind of dish that's hearty without feeling heavy.

Swaps

Feta → goat's cheese (made from pasteurised milk) | turkey mince → chicken mince (similar protein content) | olive oil → ghee (heat-stable for frying) | courgette → finely grated carrot (also provides fibre and beta-carotene)

Allergens

Contains egg and milk (feta). Good for children if moderately seasoned and cooked through well, and suitable in pregnancy too, as long as the meat is cooked right through and the feta is made from pasteurised milk.
