Ingredients
1 wholemeal wrap (without seed oils)
80 g turkey breast
3 tbsp hummus (made with olive oil, no seed oils)
¼ cucumber
1 handful of rocket
¼ pepper
1 pinch of salt
1 pinch of pepper
Method
You’ll need: chopping board · knife
Lay the wholemeal wrap on a board and spread the hummus evenly over it.
Arrange the turkey breast on the wrap so there's some in every bite.
Cut the cucumber into fine sticks and the pepper into thin strips. Briefly pick over the rocket and arrange it with the veg on one side of the wrap.
Season everything with salt and pepper. Fold in the sides slightly and roll the wrap up tightly from the bottom.
Cut the wrap in half diagonally and serve straight away.
Good to know
When it needs to be quick, a wrap like this is worth its weight in gold. Substantial, fresh and on the board without much effort. Exactly the kind of lunch that isn't heavy.
Swaps
Turkey breast → chicken breast (similar protein content); hummus → mashed avocado with lemon juice (contains monounsaturated fatty acids); wholemeal wrap → lettuce leaves (crisp and fresh); pepper → grated carrot (provides beta-carotene).
Allergens
Contains gluten (wrap) and sesame (hummus). Good for children if the wrap is cut into easy-to-hold pieces, and in pregnancy the recipe is fine with turkey breast that's been cooked right through.
