Good to know
Forget salmon. Smoked trout is a wonderfully delicate freshwater fish that goes beautifully with the heat of fresh horseradish.
Swaps
Smoked trout → smoked salmon (the classic version, though salmon has a much higher fat content than trout).
Cooking tips
Check the trout fillets very carefully for small, fine bones as you pull them apart – they could spoil every bite.
Storage
Wrap the finished wraps tightly in greaseproof paper. That way they don't dry out at the office and don't go soggy from the cream straight away.
Allergens
Contains fish, milk and gluten. Completely nut-free. In pregnancy, leave out the smoked trout, as it isn't heated here.
