Ingredients
250g low-fat quark
125g mascarpone
2 tbsp honey
100ml espresso
60 g porridge oats
2 Medjool dates (stoned)
1 tsp vanilla extract
2 tbsp cocoa powder
1 pinch of sea salt
Method
You’ll need: mini chopper · mixing bowl
Brew the espresso fresh and leave it to cool completely.
Stir the low-fat quark, mascarpone, honey, vanilla extract and sea salt together in a bowl until smooth and creamy.
Blitz the oats and dates in a mini chopper into moist crumbs and drizzle with the cooled espresso.
Layer the tiramisu cream into glasses, top with the soaked oat and date crumbs and dust with cocoa powder. Repeat the layers and finish with cream.
Chill the glasses for at least 2 hours so the cream firms up and the crumbs soak up moisture.
Before serving, dust the top finely with cocoa powder and enjoy well chilled.
Good to know
When you want something that tastes of dessert and coffee at the same time, this glass is just right. Creamy, soft and pleasantly uncomplicated. It feels like a little Sunday dessert, even midweek.
Swaps
Honey → date paste (natural sweetness plus a little fibre); mascarpone → Greek yoghurt (more protein); oats → spelt flakes (slightly nuttier); low-fat quark → skyr (similar protein content, often a little milder in flavour)
Allergens
Contains milk and gluten (oats), unless the oats are labelled gluten-free. For children, better made with decaffeinated espresso – and no honey for babies under one year old. In pregnancy, use pasteurised dairy products and keep caffeine moderate, as the NHS advises.
