Method

You’ll need: oven · saucepan · baking dish · chopping board · knife · sieve · wooden spoon

  1. Wash the sushi rice until the water runs clear and cook it according to the packet instructions. Mix the rice vinegar, honey and salt and fold the mixture into the hot rice.
  2. Preheat the oven to 200 °C (180 °C fan) and press the rice into a baking dish of about 20 x 25 cm.
  3. Drain the tuna and mix it with the skyr, soy sauce, sesame oil and chilli flakes. Spread the cream over the rice.
  4. Bake the sushi bake in the oven at 200 °C for 12 min, until the top is lightly browned.
  5. Thinly slice the avocado and cucumber, cut the spring onions into rings and quarter the nori sheets.
  6. Arrange the avocado, cucumber, spring onions and sesame seeds on the sushi bake. Spoon it onto the nori pieces and roll them up loosely to eat.

Good to know

Sushi bake is sushi for lazy days: rice in the dish, fish cream on top, a quick spell in the oven, then wrap it in nori at the table. The trend comes from Hawaii and the Philippines and has been around on TikTok for years. Instead of mayonnaise, skyr binds the tuna here.

Swaps

Tuna → cooked salmon (provides omega-3). Skyr → cream cheese (creamier). Soy sauce → tamari (gluten-free). Sushi rice → brown rice (also provides fibre, less sticky).

Cooking tips

Washed rice is sticky without turning mushy. Press the rice down firmly so you can cut the sushi bake into pieces.

Storage

Without the avocado, the sushi bake keeps for 1 day in the fridge; the rice firms up in the fridge, so warm it briefly in the oven.

Allergens

Contains fish, milk, soya, sesame and gluten (soy sauce); no egg or nuts. In pregnancy, limit tinned tuna, as the NHS advises.
