Ingredients

Method

You’ll need: frying pan · saucepan · chopping board · knife · mixing bowl

  1. Cook the amaranth in water until soft and the liquid is absorbed. Let it steam off briefly.
  2. Halve the papaya lengthways and scoop out the seeds with a spoon. Set the halves aside for filling.
  3. Slice the spring onion into thin rings. Fry it with the prawns in a little olive oil until the prawns are cooked.
  4. Put the amaranth in a bowl and mix in the prawns and spring onion. Fold in the lime juice and chopped coriander.
  5. Season the filling to taste and divide it evenly between the papaya halves.
  6. Serve the stuffed papaya fresh, with a little extra coriander and a few drops of lime juice if you like.

Good to know

This stuffed papaya is something different: fresh, savoury and pleasantly light. The combination looks special, but it's completely straightforward to make.

Swaps

Amaranth → quinoa (also provides fibre and minerals), coriander → parsley (milder, contains vitamin K), olive oil → avocado oil (heat-stable, mainly unsaturated fats)

Allergens

The recipe contains crustaceans (prawns), so it's only suitable for small children with care, because of the texture and possible allergies. During pregnancy, only use prawns that are thoroughly cooked.
