Ingredients
70g raisins
2 tbsp orange juice
280g low-fat quark
1 egg
50g honey
60g butter
110g spelt flour
150g defatted almond flour
50g whey protein powder
20g coconut sugar
1 tsp stollen spice
1 tsp baking powder
1 pinch of salt
Method
You’ll need: oven · baking tray
Soak the raisins in the orange juice for 15 minutes.
Preheat the oven to 180 °C (160 °C fan). Stir the low-fat quark, egg, honey and two thirds of the soft butter until smooth.
Mix the spelt flour, almond flour, protein powder, stollen spice, baking powder and salt, knead them in with the raisins and their juice and shape the dough into two 3 cm thick rolls.
Cut the rolls into 40 pieces, place them on a baking tray lined with baking paper and bake them at 180 °C for 18 to 20 minutes, until golden brown.
Melt the rest of the butter, brush it over the warm bites and roll them in the finely ground coconut sugar.
Leave the stollen bites to cool on a wire rack.
Good to know
Stollen bites taste like quark stollen, but they're ready in 50 minutes and don't need time to mature. The little pieces make a nice gift. Five of them are a serving with over 20 g protein.
Swaps
Raisins → chopped soft dried apricots. Orange juice → apple juice. Low-fat quark → skyr. Spelt flour → plain flour.
Cooking tips
Use a plain whey protein without sweeteners, otherwise the dough tastes artificial. Brush the bites straight after baking, so the butter soaks in and the coating sticks.
Storage
Keeps for 1 week in a tin somewhere cool, or 2 months in the freezer.
Allergens
Contains gluten (spelt), almonds, milk (quark, butter, protein powder) and egg. Because of the honey, not suitable for children under 1 year old.
