Ingredients

Method

You’ll need: oven · rolling pin · cookie cutters

  1. Knead the spelt flour, almond flour, protein powder, coconut sugar, speculoos spice, baking powder and salt with the low-fat quark, soft butter and egg into a firm dough. Wrap it and chill it for 30 minutes.
  2. Preheat the oven to 180 °C (160 °C fan) and line two baking trays with baking paper.
  3. Roll out the dough 3 mm thin on a lightly floured surface. Scatter the flaked almonds over it, press them in with the rolling pin and cut out 36 cookies.
  4. Place them on the trays and bake them one tray at a time at 180 °C for 10 to 11 minutes each, until the edges are browned.
  5. Leave the Spekulatius to cool on a wire rack – it crisps up as it cools.

Good to know

Spekulatius tastes of cinnamon, clove and cardamom, and no cookie tin is complete without it. Here some of the flour is replaced by almond flour and quark. It turns out a little thicker than shop-bought, but stays crisp.

Swaps

Spelt flour → plain flour. Low-fat quark → skyr. Flaked almonds → chopped hazelnuts. Coconut sugar → maple sugar.

Cooking tips

Use a plain whey protein without sweeteners, otherwise the dough tastes artificial. Roll out the dough between two sheets of baking paper so you hardly need any flour.

Storage

Keeps for 2 weeks in a cookie tin.

Allergens

Contains gluten (spelt), almonds, milk (quark, butter, protein powder) and egg.
