Rinse the spelt rice thoroughly and cook it in plenty of water until al dente.
Pull the oyster mushrooms into strips and finely dice the onion.
Heat olive oil in a frying pan and brown the sliced veal well. Then take the meat out of the pan and keep it warm.
Add more olive oil to the pan, cook the onion until soft and translucent and fry the oyster mushrooms well with it.
Deglaze with the vegetable stock, let the sauce reduce briefly for 2–3 min and fold the veal back in. Season with salt.
Serve the sliced veal with the spelt rice straight from the pan.
Good to know
A dish like this is just right when you want something warm and hearty that still isn't heavy. It's uncomplicated to cook and puts honest home cooking on the plate.
Swaps
Sliced veal → chicken breast (similar protein content). Spelt rice → brown rice (also provides complex carbohydrates and fibre). Oyster mushrooms → mushrooms (similarly savoury, with fibre). Olive oil → ghee (stable at high heat).
Allergens
The dish contains gluten from the spelt rice; depending on the stock, other allergens may be present. Well suited to children if the meat is cooked until tender and seasoned moderately; during pregnancy make sure the veal is fully cooked through and the mushrooms are fresh.
