Ingredients

Method

You’ll need: frying pan · chopping board · knife · wooden spoon

  1. Cook the basmati rice according to the packet instructions and keep it warm until serving.
  2. Cut the beef across the grain into thin strips and season with salt and pepper. Heat the butter or ghee in a large frying pan until very hot and sear the meat briefly in batches, then remove it.
  3. Fry the onion and peppers in the same pan until slightly softened. Add the garlic and paprika and toast only briefly so the spices stay aromatic.
  4. Deglaze with the beef stock, scrape up the browned bits and let the sauce reduce a little. Stir in the soured cream and bring everything together into a creamy sauce.
  5. Return the seared beef to the pan and just warm it through gently in the sauce. Don't let it boil hard again, so the meat stays tender.
  6. Sprinkle with parsley and serve the sliced beef with peppers alongside the basmati rice.

Good to know

A dish like this takes few detours and still delivers lots of flavour. Nicely savoury, creamy and just right when you want something satisfying and easy.

Swaps

Soured cream → Greek yoghurt (more protein) | Beef fillet → rump steak (works just as well) | Basmati rice → brown basmati rice (more fibre) | Butter → ghee (less lactose, can be heated to high temperatures)

Allergens

Contains milk from the soured cream and, depending on your choice, butter or ghee. For children, season mildly and cook the peppers until really soft; during pregnancy, make sure the beef is cooked right through.
