High-protein sirloin steak with asparagus and wild rice
High-protein sirloin steak with asparagus and wild rice: a hearty recipe with tender steak, asparagus with a bit of bite and nutty wild rice for a balanced meal.
Rinse the wild rice thoroughly and cook it in water according to the packet instructions until tender and fluffy.
Wash the asparagus, remove the woody ends and cut the spears into pieces.
Pat the sirloin steak dry. Heat the olive oil in a large frying pan and sear the steak over a high heat on both sides.
Take the sirloin steak out of the pan and let it rest briefly. Then add a little more olive oil to the pan and fry the asparagus until tender-crisp.
Slice the sirloin steak and season with salt and pepper.
Arrange the wild rice, asparagus and sirloin steak together and serve warm straight away.
Good to know
When you want a proper meal that doesn't feel heavy, this dish is just right. It's straightforward and really looks the part on the plate.
Swaps
Sirloin steak → chicken breast (also provides protein); wild rice → quinoa (provides fibre and magnesium); asparagus → broccoli (contains fibre and vitamin C); olive oil → ghee (heat-stable for frying)
Allergens
The recipe is naturally free from gluten, egg and nuts. For sensitive children, tender cooked steak often works better, and in pregnancy, serve the sirloin steak cooked right through.
