High-protein red cabbage bowl with turkey, buckwheat and pear
Red cabbage bowl with pan-fried turkey breast, buckwheat, pear, rocket and toasted hazelnuts in a honey and vinegar dressing. A gluten-free lunch with 46 g protein per serving.
Cook the buckwheat in twice its volume of salted water for 12 to 15 minutes until soft, then drain.
Cut the red cabbage into thin strips, salt it and knead it with your hands for 2 minutes until it softens.
Whisk two thirds of the olive oil with the apple cider vinegar, honey and pepper and mix half the dressing into the red cabbage.
Cut the turkey breast into strips, season with the paprika and salt and fry in the rest of the olive oil for 5 to 6 minutes until cooked through.
Toast the hazelnuts in a dry frying pan for 3 minutes and chop them roughly. Quarter and core the pear and cut it into wedges.
Divide the buckwheat, rocket, red cabbage, turkey and pear between two bowls, drizzle with the rest of the dressing and sprinkle with the hazelnuts.
Good to know
Raw, kneaded red cabbage stays crunchy and soaks up the dressing well. With turkey, nutty buckwheat and pear, it makes a bowl that still tastes good the next day.
Kneading makes raw red cabbage softer and milder. Fry the turkey strips in a single layer, otherwise they release juice.
Storage
Keeps for 2 days in the fridge without the rocket and dressing – good for taking with you.
Allergens
Contains hazelnuts (tree nuts); gluten-free, no milk or egg. Suitable for children and in pregnancy if the turkey is cooked through; no honey for babies under one year old.
