Good to know
Pineapple and melted cheese are the Hawaiian pairing you know from toast. Here, curried chicken sits under the pineapple, so it tastes fruity and spiced at the same time. The yoghurt marinade keeps the meat juicy on the hot plate.
Let the marinade drain off well, or the chicken will stew on the hot plate instead of frying. Tinned pineapple in its own juice works too, well drained.
Storage
Marinated chicken keeps covered in the fridge for 1 day, cut pineapple for 2 days.
Allergens
Contains milk; gluten-free, no egg or nuts. With mild curry powder, it's suitable for children too. In pregnancy, cook the chicken right through and use cheese made from pasteurised milk.
