Ingredients

Method

You’ll need: frying pan · saucepan · raclette grill · chopping board · knife

  1. Boil the potatoes in their skins in salted water for 20 minutes until cooked and keep them warm, covered.
  2. Cut the chicken breast into thin strips and mix them with the olive oil, paprika, salt and pepper.
  3. Deseed the peppers and cut them into narrow strips. Slice the spring onions into rings and the raclette cheese into slices.
  4. Preheat the raclette grill for 10 minutes. Fry the chicken strips on the hot plate for 5 to 6 minutes until cooked through.
  5. Fill the little pans with chicken, peppers and spring onions, top each with a slice of cheese and let them bake under the grill for 5 to 6 minutes.
  6. Slide the contents of the pans onto the potatoes and eat straight away.

Good to know

With raclette, the little pans often end up holding more cheese than anything else. Here you fry the chicken on the hot plate first, so meat, veg and cheese all go into one pan together.

Swaps

Chicken breast → turkey breast. Raclette cheese → Alpine cheese (stronger flavour). Potatoes → broccoli. Peppers → courgette.

Cooking tips

Cut the chicken no more than 1 cm thick so it cooks through quickly on the plate. Keep raw and cooked meat on separate plates.

Storage

Marinated chicken keeps covered in the fridge for 1 day; leftover veg and cheese for 2 days.

Allergens

Contains milk; gluten-free, no egg or nuts. Suitable for children. In pregnancy, only use raclette cheese made from pasteurised milk and cook the chicken right through.
