Ingredients

Method

You’ll need: frying pan · saucepan · chopping board · knife · mixing bowl · sieve · spatula

  1. Cook the quinoa in lightly salted water until al dente, then drain very well in a fine sieve and leave to cool a little.
  2. Finely dice the onion and crumble the feta. Mix both thoroughly in a bowl with the quinoa, eggs, salt and black pepper until the mixture holds its shape.
  3. For the dip, finely snip the chives. Stir the low-fat quark with a splash of sparkling water until creamy, fold in the chives and season to taste with salt and pepper.
  4. Warm the coconut oil in a non-stick frying pan over a medium heat. Shape the quinoa mixture into small, flat fritters and put them in the pan.
  5. Fry the fritters until golden brown on both sides, turning them carefully, so they're crisp outside and well bound and cooked through inside.
  6. Serve the quinoa fritters hot with the fresh herb quark.

Good to know

Golden brown outside, moist inside – that's just how I like fritters. Add a cool herb quark and dinner's on the table fast.

Swaps

Feta → cottage cheese (similar protein content); low-fat quark → skyr (more protein, similarly fresh); coconut oil → ghee (heat-stable and aromatic); chives → parsley (also provides vitamin K and plant compounds).

Allergens

Contains egg and milk. Usually good for children if the fritters are mildly seasoned; in pregnancy, only use dairy products made from pasteurised milk (feta included) and cook the fritters right through.
