You’ll need: chopping board · knife · mixing bowl

  1. Put the low-fat quark in a bowl and stir it with a spoon until smooth and creamy.
  2. Pour the honey over the quark and fold it in gently, or leave it as a thin layer on top.
  3. Roughly chop the walnuts so they spread more evenly and add more bite.
  4. Scatter the chopped walnuts over the quark and leave it for a moment so the flavours come together.
  5. Stir the quark lightly once more if you like an even texture.
  6. Serve fresh and enjoy straight away.

Good to know

When things need to be quick, this recipe is just right. Creamy, mildly sweet and with a pleasant crunch. So simple that it really works on busy days.

Swaps

Low-fat quark → skyr (similar protein content, often a little milder); honey → date paste (unrefined sweetness plus some fibre); walnuts → almonds (more vitamin E and also a nice crunch); walnuts → hazelnuts (aromatic, with fibre and unsaturated fats).

Allergens

Contains milk and tree nuts. Generally suitable for children – chop the nuts finely for little ones – and usually fine during pregnancy if you get on well with dairy.
