Ingredients

Method

You’ll need: chopping board · knife · mixing bowl · sieve

  1. Put the low-fat quark and water in a mixing bowl and beat with a spoon until creamy.
  2. Briefly rinse the raspberries in cold water and leave them to drain well in a sieve.
  3. Roughly chop the walnuts.
  4. Spoon the quark into two shallow bowls and scatter the raspberries loosely on top.
  5. Sprinkle the nuts around the edge and drizzle the honey over the top in thin criss-cross lines.

Good to know

Low-fat quark is the queen of fitness kitchen staples. Stirred smooth with a little water, it turns light and airy and tastes really refreshing.

Swaps

Honey → maple syrup (if you'd rather avoid animal products for sweetening, reach for this plant-based liquid syrup).

Cooking tips

Ideally use sparkling mineral water instead of still water – it makes the thick quark mixture a touch airier.

Storage

The whipped quark keeps fresh in the fridge for a long time. But only sprinkle over the nuts just before eating, so they stay crunchy.

Allergens

Contains milk and walnuts. Completely gluten-free.
