Ingredients
250g low-fat quark
200g berries
2 tbsp yacon syrup
50g rolled oats
30g almonds
2 tbsp coconut oil
Method
You’ll need: oven · baking dish · mixing bowl
Preheat the oven to 180 °C (160 °C fan) and stir the low-fat quark with half the yacon syrup until smooth.
Spread the quark mixture over the base of a small baking dish and scatter the washed berries straight on top.
Briefly melt the coconut oil and, in a bowl, work it into the oats, the chopped almonds and the rest of the syrup to make coarse crumbs.
Crumble the oat and almond mixture thickly over the juicy berries in the baking dish.
Bake the crumble on the middle shelf for about 25 minutes until the berries are bubbling and the topping is really crunchy.
Good to know
Why should a crumble be nothing but fat and sugar? This version uses high-protein quark as its base and tops it with extra crunch.
Swaps
Low-fat quark → skyr (if you prefer a slightly tangier, firmer texture for the creamy base).
Cooking tips
If the oat crumble doesn't stick together well, just add a tiny splash of water to the mixture and knead it again.
Storage
Reheated, this crumble tastes just as good the next day. Or you can spoon it cold straight from the fridge.
Allergens
Contains milk, gluten (oats) and tree nuts (almonds).
