1 tsp baking powder
Method
You’ll need: oven · baking dish · mixing bowl
Preheat the oven to 180 °C (160 °C fan) and lightly grease a baking dish.
Separate the eggs, set the egg whites aside and stir the egg yolks in a large bowl with the low-fat quark and honey until smooth.
Fold the almond flour and baking powder into the quark mixture.
Whisk the egg whites until stiff and carefully fold them into the batter.
Spread the frozen berries over the bottom of the dish, pour the batter over them and bake at 180 °C for 30–35 min until golden brown.
Good to know
Warm desserts don't have to be complicated. This classic quark bake is fluffy, fruity and comes with plenty of protein.
Swaps
Low-fat quark → curd cheese (for a grainier, more traditional texture). Almond flour → lupin flour (similar protein content). Mixed berries → sliced apples.
Cooking tips
Always fold in the egg whites with a spatula – a whisk would destroy the tiny air bubbles you've whisked in.
Storage
Tastes best fresh from the oven; as expected, it sinks a little as it cools.
Allergens
Contains eggs and milk (lactose). Gluten-free. Contains: tree nuts.
