Ingredients

Method

You’ll need: saucepan · mixing bowl · wooden spoon

  1. Put the oats in a small pan with the water and a pinch of salt and bring briefly to the boil.
  2. Leave the oats to swell over a low heat until soft and they've absorbed almost all the liquid. Stir now and then.
  3. Stir the vegan protein powder into the cold oat milk until smooth, so no lumps form.
  4. Take the pan off the hob and stir the protein mixture thoroughly into the warm porridge until creamy.
  5. Taste the porridge and stir in a little more oat milk if you like it a bit looser.
  6. Spoon the porridge into a bowl and finish with the peanut butter on top.

Good to know

When mornings need to be uncomplicated, a warm bowl like this is just good. Creamy, mild and pleasantly nutty – without much effort.

Swaps

Oat milk → unsweetened soya milk (usually a little more protein; contains soya). Peanut butter → almond butter (also provides unsaturated fatty acids; contains tree nuts). Vegan protein powder → soya-based skyr alternative (less processed, a little milder depending on the product; contains soya). Oats → fine spelt flakes (similar fibre, slightly different texture).

Allergens

Contains peanuts and gluten (oats and oat milk, unless labelled gluten-free), and soya too, depending on the protein powder. For children it's easy to keep plain, but watch out for nut allergies; in pregnancy the ingredients are fine, as long as the protein powder suits your diet.
