High-protein peanut butter fudge with dark chocolate
High-protein peanut butter fudge with dark chocolate: a creamy, quick recipe with peanut butter, protein powder, coconut oil and a hint of maple syrup.
Warm the peanut butter and coconut oil over a low heat until both are soft and smoothly combined.
Take the pan off the heat and stir in the maple syrup. Then fold in the protein powder thoroughly until you have an even mixture you can shape.
Line a small tin with baking paper and spread the fudge mixture smoothly into it. Press the surface down firmly with a spoon or spatula.
Gently melt the dark chocolate and spread it thinly over the mixture. For a pattern, you can swirl it in lightly or drizzle it loosely over the top.
Chill the tin until the fudge is firm. Then cut into pieces.
Serve slightly chilled straight away and keep leftovers in the fridge so the fudge stays compact and creamy.
Good to know
Fudge like this is quick to make and still feels special. Open the fridge, cut a piece, done. Just right when you want something sweet with a bit more substance.
Swaps
Peanut butter → almond butter (contains vitamin E; tree nuts) | maple syrup → date paste (also provides fibre and minerals) | dark chocolate → cacao nibs (less sweet, more crunch)
Allergens
Contains peanuts and, depending on the protein powder, milk; dark chocolate may contain traces of nuts or soya. For children, only in small, age-appropriate pieces because of the firm texture; in pregnancy, fine in normal amounts as long as all the ingredients agree with you.
