High-protein pan-fried wild salmon with lemon butter
High-protein pan-fried wild salmon with lemon butter: juicy wild salmon from the frying pan with butter, lemon, dill and olive oil. Quick, simple and with plenty of protein.
Take the wild salmon fillet out of the fridge for a short while and season with salt and pepper.
Heat the olive oil in a frying pan and lay the wild salmon in it skin side down. Fry it steadily until the skin is crisp and you can see the fillet cooking at the sides.
Carefully turn the wild salmon and reduce the heat a little. Add the butter to the pan and let it melt.
Stir in the lemon juice and keep spooning the lemon butter over the wild salmon. Cook until the fish is just moist inside.
Finely pick or chop the dill and scatter it over the finished wild salmon.
Good to know
Sometimes a good frying pan and a nice piece of fish are all you need. This recipe is simple and warm – and that's exactly what makes it so good.
Swaps
Wild salmon → Arctic char (also provides protein and omega-3 fatty acids); butter → ghee (contains hardly any lactose and can take high heat; still contains milk); dill → parsley (provides vitamin K); lemon → lime (similarly fresh, with vitamin C)
Allergens
Contains fish and milk (butter). Usually suitable for children if the fish is fully cooked and carefully checked for bones; in pregnancy, cook the salmon right through.
