Ingredients
100g berries
60g rolled oats
150g skyr
100ml milk
20g almonds
1 tbsp chia seeds
1 tsp honey
1 pinch of cinnamon
Method
You’ll need: chopping board · knife · mixing bowl
Stir the oats, skyr, milk and chia seeds together thoroughly in a jar or bowl until everything is evenly mixed.
Stir in the honey and cinnamon. Leave the mixture to stand briefly so the chia seeds start to absorb liquid.
Cover and put in the fridge for several hours to soak, ideally overnight.
The next morning, give the oats a stir. If the texture is too firm for you, stir in a little milk.
Wash the berries and cut them smaller if needed. Roughly chop the almonds.
To serve, spoon the berries over the oats and scatter over the almonds.
Good to know
When mornings are short on time, these overnight oats are simply easy. Made the evening before, creamy and fresh in the morning – just right for a relaxed start to the day.
Swaps
Skyr → plain Greek yoghurt (similar protein content, a little creamier); milk → unsweetened soya milk (also provides protein); almonds → walnuts (more omega-3 fatty acids); honey → mashed banana (more fibre, sweetened with fruit only)
Allergens
Contains milk and almonds (tree nuts); well suited to children if nuts are offered in an age-appropriate way, and generally fine during pregnancy as long as pasteurised dairy products are used. Contains: gluten (oats).
