  1. Brown the beef mince in a wide pan without any fat for 6 min until crumbly.
  2. Dice the onion and garlic, fry them with the mince for 2 min and stir in the tomato purée, paprika and oregano for 1 min.
  3. Pour in the tomatoes and stock, bring to the boil and stir in the orzo. Simmer uncovered for 6 min, stirring often.
  4. Cut the savoy cabbage into thin strips, add it to the pan and cook for another 4 to 5 min, until the orzo and cabbage are tender.
  5. Season with salt and pepper and serve the orzo hot.

Good to know

Orzo looks like rice but is pasta, and it cooks in ten minutes straight in the sauce. With beef mince and savoy cabbage it becomes a winter dish that recalls stuffed cabbage rolls, just without the rolling. One pot, half an hour.

Swaps

Beef mince → lamb mince or red lentils (vegan, then add 2 tbsp olive oil). Savoy cabbage → sweetheart cabbage or kale. Orzo → wholewheat orzo. Oregano → marjoram.

Cooking tips

Stir the orzo often in the first few minutes; it quickly sticks to the bottom of the pan. If the sauce is too thick, add a splash of water.

Storage

Keeps for 3 days in the fridge; the orzo keeps soaking up liquid, so add a little water when reheating.

Allergens

Contains gluten (wheat); no milk, egg or nuts. Suitable for children. Suitable in pregnancy, as the mince is cooked through.
