High-protein mushroom porridge with egg, Alpine cheese and chives
High-protein mushroom porridge made with oats, mushrooms, Alpine cheese and fried eggs. A warm, savoury breakfast with stock and 36 g protein per bowl, ready in 25 minutes.
Trim and slice the mushrooms. Peel and finely dice the shallot.
Fry the mushrooms and shallot in the olive oil in a saucepan for 5 min, until the mushrooms take on some colour. Take out half.
Add the oats, vegetable stock and milk to the pan and simmer for 5 min, stirring.
Fry the eggs in a non-stick frying pan until the egg whites are set.
Grate the Alpine cheese, stir it into the porridge and season with pepper. Finely snip the chives.
Divide the porridge between two bowls, top with the rest of the mushrooms and the fried eggs and scatter over the chives.
Good to know
Porridge doesn't have to be sweet. With stock, mushrooms and Alpine cheese, it tastes like a little risotto. A fried egg on top makes it a proper breakfast.
Swaps
Mushrooms → king oyster mushrooms or chanterelles. Alpine cheese → vegetarian hard cheese (Parmesan-style). Milk → more stock (no cow's milk). Fried eggs → soft-boiled eggs (hard-boiled in pregnancy).
Cooking tips
Don't overcrowd the pan when frying the mushrooms, or they'll release water instead of browning. Fine oats turn creamier than jumbo oats.
Storage
The mushroom porridge keeps in the fridge for 2 days; fry the eggs fresh when serving.
Allergens
Contains gluten (oats), egg and milk. In pregnancy, fry the eggs until the egg yolks are firm.
