Ingredients
2 organic eggs
4 tbsp spelt flour
250 g low-fat quark
1 tbsp honey
1 tsp butter (for the pan)
Method
You’ll need: frying pan · mixing bowl · spatula
Stir the eggs, low-fat quark, spelt flour and honey in a bowl until smooth and you have a creamy batter.
Melt the butter in a non-stick frying pan over a medium heat.
Add the batter to the pan in portions to make small pancakes. Cook briefly until the underside is golden brown.
Carefully flip the pancakes and finish cooking the second side until they've risen slightly and are cooked through.
If needed, turn the heat down a little so the pancakes colour on the outside and stay moist inside.
Serve warm, topped with a little quark, fresh fruit or an extra small dollop of honey if you like.
Good to know
When mornings need to be easy, these little pancakes are just right. They turn out soft, golden brown and pleasantly satisfying. The kind of recipe you'll want to make again and again.
Swaps
Spelt flour → oat flour (more fibre) | Low-fat quark → skyr (similar protein content) | Honey → date paste (unrefined sweetness plus a little fibre) | Butter → ghee (can be heated to high temperatures, aromatic)
Allergens
Contains milk, egg and gluten. Usually well suited to children if the texture and sweetness suit them (no honey for babies under a year old); during pregnancy it's no problem with fresh eggs and hygienic preparation.
