  1. Slice the potatoes, cut the roast beef into strips and the onion into rings. Halve the Brussels sprouts.
  2. Par-cook the Brussels sprouts in a little salted water for 5 min and drain.
  3. Fry the potatoes in half the olive oil in a large frying pan for 8 min until browned. Only turn them two or three times.
  4. Add the onion, Brussels sprouts and beef, season with caraway, salt and pepper and fry everything for another 5 min.
  5. Fry the eggs in the rest of the olive oil in a second pan and place them on top of the hash.

Good to know

On Boxing Day there's almost always some roast left over. In a Tyrolean hash, it goes into the pan with the potatoes from the day before. With Brussels sprouts and a fried egg, it's a complete meal in half an hour.

Swaps

Roast beef → roast goose, duck or turkey. Brussels sprouts → savoy cabbage or kale. Fried egg → scrambled egg. Caraway → marjoram.

Cooking tips

Cold potatoes boiled the day before get crispier than freshly cooked ones. Leave them to fry undisturbed and turn them rarely.

Storage

Best fresh. Without the egg, 2 days in the fridge.

Allergens

Gluten-free, no milk or nuts; contains egg. Suitable for children. In pregnancy, fry the egg on both sides until the yolk is firm.
