Ingredients

Method

You’ll need: oven · baking tray · grater

  1. Preheat the oven to 170 °C (150 °C fan) and line a baking tray with baking paper. Grate the zest of the orange.
  2. Whisk the eggs and honey for 3 minutes until frothy and stir in the skyr.
  3. Mix the almond flour, hazelnuts, protein powder, cocoa, gingerbread spice, baking powder and orange zest and stir them into the egg mixture. Leave the dough to swell for 10 minutes.
  4. Use two wet tablespoons to place 24 mounds on the tray, smooth them into rounds and press an almond into the middle of each.
  5. Bake the Lebkuchen at 170 °C for 14 to 16 minutes, until the tops feel firm.
  6. Leave them to cool on a wire rack and store them in a tin with a strip of orange zest.

Good to know

Soft Lebkuchen without a wafer base, nicely mellowed after just one day in the tin. Skyr and almond flour replace some of the nuts. That way four of them give you more than 20 g protein.

Swaps

Skyr → low-fat quark. Ground hazelnuts → ground almonds. Honey → maple syrup. Protein powder → 30 g more almond flour (less protein).

Cooking tips

Use a plain whey protein without sweeteners, otherwise the dough tastes artificial. Take the Lebkuchen out while they are still soft inside; they firm up as they cool.

Storage

Keeps for 1 week in a tin somewhere cool.

Allergens

Contains almonds, hazelnuts, egg and milk (skyr, protein powder); no gluten-containing grains. Not suitable for children under 1 year because of the honey.
