  1. Knead the wholemeal spelt flour, ground hazelnuts, soft butter and a quarter of the honey into crumbs and press them into a 20 by 30 cm tin lined with baking paper.
  2. Pre-bake the base in a preheated oven at 180 °C (160 °C fan) for 10 minutes.
  3. Whisk the low-fat quark, eggs, cornflour, remaining honey, gingerbread spice, cocoa and grated orange zest into a smooth cream.
  4. Pour the quark cream over the base. Reduce the temperature to 170 °C and bake the cheesecake for 40 to 45 minutes, until the middle only wobbles slightly.
  5. Leave it to rest in the oven with the door open for 15 minutes, then let it cool and chill for at least 2 hours.
  6. Cut the cheesecake into 16 pieces and serve two pieces per serving.

Good to know

Cheesecake and Lebkuchen in one: creamy, spiced and with a crunchy hazelnut base. With a kilo of low-fat quark, one serving contains around 21.4 g protein.

Swaps

Low-fat quark → skyr (slightly firmer). Wholemeal spelt flour → ground almonds (gluten-free, with gluten-free starch). Honey → maple syrup. Orange → lemon.

Cooking tips

Only whisk the quark mixture until smooth and don't beat in any air, so the top doesn't crack. It cuts most cleanly the next day.

Keeps for 4 days in the fridge.

Allergens
