Method

You’ll need: saucepan · chopping board · knife · grater · wooden spoon · ladle

  1. Finely dice the onion and carrot and chop the garlic.
  2. Fry the beef mince in the olive oil in a large pan for 5 minutes until crumbly. Add the onion, carrot and garlic and fry everything for 3 minutes more.
  3. Stir in the tomato purée and oregano and fry for 1 minute. Pour in the tomatoes and beef bone broth and bring everything to the boil.
  4. Break the lasagne sheets into bite-sized pieces and add them to the soup. Simmer for 10 to 12 minutes, stirring now and then, until the pasta is cooked.
  5. Season the soup with salt and pepper. Tear the basil into small pieces and stir half of it into the ricotta.
  6. Divide the soup between four bowls, top each with a spoonful of basil ricotta, grate over the parmesan and scatter over the remaining basil.

Good to know

Everything you love about lasagne, just as a soup and in half an hour. The sheets cook in the tomato broth, and a dollop of basil ricotta stands in for the béchamel.

Swaps

Beef mince → turkey mince. Lasagne sheets → wholewheat lasagne sheets (also provide fibre). Beef bone broth → vegetable stock. Ricotta → cottage cheese (a little more protein).

Cooking tips

The pasta keeps soaking up liquid after cooking. If you're cooking ahead, only add the sheets when you reheat the soup.

Storage

Without the pasta, it keeps for 3 days in the fridge, or 3 months in the freezer.

Allergens

Contains gluten, milk and possibly celery in the broth; no egg or nuts. Suitable in pregnancy as long as the mince is cooked right through and the ricotta is made from pasteurised milk.
