Ingredients

Method

You’ll need: mixing bowl · sieve

  1. Wash the berries and drain them well. Let frozen berries thaw a little first so the parfait doesn't get watery.
  2. Spoon the Greek yoghurt into a bowl and stir until smooth. Fold in the honey until everything is creamy and combined.
  3. Get a glass or bowl ready and spoon in some yoghurt. Then scatter berries, granola and chia seeds on top.
  4. Repeat the layers until all the ingredients are used up. Finish with a few berries and a little granola on top.
  5. Leave the parfait to stand briefly so the chia seeds can swell a little while the granola keeps some texture.
  6. Serve straight away, finished with a thin extra drizzle of honey if you like.

Good to know

A parfait like this is uncomplicated but still feels special. Creamy, fresh and with just the right contrast between soft and crunchy.

Swaps

Greek yoghurt → skyr (more protein, a little less fat). Granola → oats with nuts (less free sugar, more bite; oats contain gluten, nuts are tree nuts). Honey → mashed banana (milder sweetness, plus fibre). Chia seeds → ground linseed (fibre and omega-3 fatty acids).

Allergens

Contains milk and gluten (oats in the granola, unless labelled gluten-free); granola can also contain nuts or sesame, so check the ingredients. Good for children if the granola isn't too hard. In pregnancy, use pasteurised yoghurt. If you're pregnant, or making it for children or older people, boil frozen berries for 2 minutes first and let them cool. Honey isn't suitable for babies under 1 year old.
