Ingredients
250 g quark
2 tbsp milk
2 tbsp honey
100 g wild blueberries
30 g flaked almonds
1 tbsp chia seeds
1 pinch of cinnamon
1 splash of vanilla extract
Method
You’ll need: frying pan · mixing bowl · sieve
Stir the quark with the milk and vanilla extract in a bowl until smooth and creamy.
Wash the blueberries and drain them well. If you're using frozen ones, thaw them completely and pat them dry.
Toast the flaked almonds briefly in a non-stick frying pan without any extra fat until lightly golden. Then leave them to cool a little.
Spoon the quark cream into a bowl and top with the blueberries, flaked almonds and chia seeds.
Drizzle with the honey and finish with cinnamon.
Serve straight away so the almonds stay crunchy and the bowl tastes nice and fresh.
Good to know
So simple, so good: creamy, fresh and ready in a few minutes. Just the kind of breakfast that never feels heavy.
Swaps
Quark → plain Greek yoghurt (slightly milder in flavour, similar protein content); honey → date paste (unrefined sweetness with a little fibre); flaked almonds → walnuts (more omega-3 fatty acids); milk → unsweetened kefir (fermented, with a natural tang and similar creaminess)
Allergens
Contains milk and tree nuts (almonds). Use chia seeds sparingly for children, as some sensitive stomachs aren't used to them. For pregnant women, children and older people, boil frozen berries for 2 minutes first and let them cool (or use fresh berries). Because of the honey, it isn't suitable for babies under 1 year old.
