Preheat the oven to 200 °C (180 °C fan). Wash the potatoes thoroughly and cut them into chunky wedges.
Cut the chicken breast into fairly large pieces. Slice the pepper into wide strips and cut the red onion into chunky wedges.
Put the potatoes, chicken, pepper, onion and black olives in a large baking dish. Toss well with the olive oil, oregano, salt and coarse pepper.
Bake in the oven at 200 °C for 30–35 min until the potatoes are soft and golden brown and the chicken is cooked all the way through. Turn everything over thoroughly once halfway through.
Leave to rest briefly so the juices spread and the roast veg can settle a little.
Serve hot and spoon the flavourful juices from the dish straight onto the plates.
Good to know
A traybake like this gets dinner on the table fast without much thinking. Everything cooks together, turns full of flavour and stays pleasantly uncomplicated.
Swaps
Chicken breast → skinless chicken thighs (a little juicier, also provides protein). Black olives → Kalamata olives (similar nutrient profile, usually stronger in flavour). Potatoes → sweet potatoes (more beta-carotene, slightly sweeter). Olive oil → avocado oil (stable when heated, with monounsaturated fatty acids).
Allergens
The dish is naturally free from dairy, egg and nuts. The main points to note are the olives as a salty ingredient and the chicken, which should always be cooked all the way through, especially for children and in pregnancy.
