Cut the stewing beef into cubes. Chop the peppers and potatoes into small pieces, and finely dice the onion and garlic.
Heat the olive oil in a large pan and brown the beef in batches over a high heat until browned all over. Then take it out of the pan for a moment.
Cook the onion and garlic gently in the pan juices until soft and translucent. Stir in the paprika and caraway and toast briefly so the spices release their aroma.
Return the beef to the pan and add the passata and beef stock. Bring to the boil, then simmer gently over a low heat for 50–60 min, until the beef is tender.
Add the peppers and potatoes and keep cooking until the vegetables are soft and the meat is tender. Finally, season to taste with salt and pepper.
Serve with a dollop of yoghurt (plant-based to keep it dairy-free) and fresh parsley.
Good to know
A soup like this feels like real cooking. Rich, warm and uncomplicated – just right when you fancy something down to earth.
The soup itself is dairy-free; the yoghurt to serve contains milk unless you use a plant-based one, and check the stock too. Usually good for children, but season it more mildly; in pregnancy, make sure the beef is well cooked through.
