High-protein fluffy scrambled eggs with chives and wild salmon: creamy eggs with cream, butter, fresh chives and smoked wild salmon for a quick, savoury breakfast.
You’ll need: frying pan · chopping board · knife · mixing bowl · spatula
This is how I like scrambled eggs best: soft, moist and made without rushing. The salmon adds savoury depth, and the chives bring freshness to every bite.
Wild salmon (smoked) → fresh wild salmon or steamed salmon (less salt, no smoke compounds) Cream → 10% Greek yoghurt or skyr (more protein, less fat depending on your choice) Butter → ghee (more heat-stable) Salt → lemon juice + a little herb salt (less sodium, more freshness)
Contains egg, milk and fish; usually fine for children if moderately seasoned. In pregnancy, leave out the smoked salmon, as it isn't heated here, and let the eggs set completely.
Wild salmon mainly provides protein, vitamin B12, selenium and omega-3 fatty acids such as EPA and DHA. Depending on where it comes from, it can also contain vitamin D.
Eggs contain choline, vitamin B12, vitamin A, selenium and some vitamin D, among other things. The yolk also provides fat and fat-soluble vitamins.
Yes, even if the amount is small: chives provide some vitamin K, vitamin C and sulphur-containing plant compounds. With typical portion sizes, though, the actual amounts stay fairly modest.
Smoked salmon brings fat, smoky flavour and quite a lot of salt, so a little goes a long way. In pregnancy, only eat it cooked until steaming hot.
Thanks to the wild salmon, the dish brings plenty of EPA and DHA. Exactly how much depends a lot on the species, the fishing area and how the salmon was processed.
