High-protein eggs Benedict with trout for Christmas breakfast
High-protein eggs Benedict on spelt rolls with smoked trout, spinach, poached eggs and a hollandaise made with egg yolk, butter and skyr. A breakfast with 44 g protein per plate.
Squeeze the lemon and melt the butter. Whisk the egg yolks, lemon juice and mustard in a metal bowl set over a pan of simmering water for 3–4 minutes until creamy.
Pour in the butter in a thin stream, take the bowl off the pan and stir in the skyr and salt.
Add the cider vinegar to the simmering water. Crack the eggs one at a time into a cup, slide them into the water one after another and poach them for 3–4 minutes.
Halve the spelt rolls and toast the halves in the toaster.
Top each half with spinach and smoked trout, place a poached egg on top and spoon over the skyr cream.
Snip the chives, scatter them over the eggs Benedict and serve straight away.
Good to know
Eggs Benedict are a classic for long holiday breakfasts. Here, smoked trout sits under the poached egg, and half the hollandaise is made with skyr. A splash of vinegar in the water makes poaching easy.
Whisk the hollandaise over a low heat – the water should only simmer. If it gets too thick, stir in a teaspoon of warm water.
Storage
Serve fresh; the skyr hollandaise keeps covered for 1 day in the fridge.
Allergens
Contains gluten (spelt), egg, fish, milk and mustard. Not suitable during pregnancy: poached eggs and hollandaise are not fully cooked, and smoked fish can contain listeria.
