Ingredients

Method

You’ll need: frying pan · saucepan · blender · chopping board · knife · sieve

  1. Grind the cashews with the nutritional yeast, garlic powder and sea salt in a blender until you have a crumbly, parmesan-like texture. Set aside.
  2. Cook the edamame spaghetti in salted water until al dente, saving a little pasta water before draining.
  3. Slice the mushrooms and finely chop the garlic. Fry the mushrooms in the truffle oil until golden brown, adding the garlic only briefly at the end.
  4. Add the edamame spaghetti to the mushrooms in the pan with a little pasta water. Toss well until the pasta is glossy and coated.
  5. Season to taste with the rest of the truffle oil, black pepper and sea salt. Finely chop the parsley.
  6. Divide between plates, sprinkle with the cashew parmesan and parsley and serve straight away.

Good to know

When it needs to be quick but should still taste like something special, this dish is just right. Hearty, creamy and pleasantly easy.

Swaps

Cashews → almonds (also provide fibre and vitamin E). Mushrooms → king oyster mushrooms (more bite, similar minerals). Truffle oil → extra virgin olive oil (contains natural polyphenols, if real truffle flavour isn't important to you).

Allergens

Contains tree nuts (cashews) and soya (edamame). For children it's fairly mild – just go easy on the truffle flavour. In pregnancy, fine as long as the mushrooms are cooked through and everything is freshly prepared.
