High-protein Dominosteine (layered gingerbread cubes) with dried plums and quark marzipan
High-protein Dominosteine with a gingerbread base, prune purée and quark marzipan made from defatted almond flour, under a cocoa glaze. Desserts for the fridge: 21 g protein per serving (4 cubes).
Preheat the oven to 175 °C (155 °C fan) and line a 20 × 20 cm square tin with baking paper. Stir together the eggs, half of the low-fat quark and half of the honey, stir in half of the almond flour, the gingerbread spice and the baking powder, and spread the batter in the tin.
Bake the base at 175 °C for 12 to 14 minutes and leave it to cool in the tin.
Blend the prunes with a splash of hot water into a thick purée and spread it over the base.
Knead the remaining almond flour, the protein powder, the remaining low-fat quark and a quarter of the honey into a marzipan-like paste. Roll it out between baking paper to 20 × 20 cm and lay it over the prune layer.
Melt the coconut oil, stir in the cocoa, salt and the rest of the honey, spread the glaze over the top and chill everything for 1 hour.
Cut the slab into 32 cubes with a hot knife.
Good to know
Dominosteine have three layers – gingerbread, fruit and marzipan – plus chocolate. Here you only bake the base; the rest is layered and chilled. The cubes are softer than shop-bought ones and belong in the fridge.
Use a plain whey protein without sweeteners, otherwise the dough tastes artificial. Wipe the knife after each cut and dip it in hot water to keep the edges clean.
Storage
Keeps for 5 days in a tin in the fridge.
Allergens
Contains almonds, egg and milk (quark, protein powder); no gluten-containing grains. Not suitable for children under 1 year because of the honey.
