Method

You’ll need: oven · grater · cookie cutters

  1. Grate the zest of the orange. Knead the wholemeal spelt flour, almond flour, protein powder, baking powder, salt and orange zest with the low-fat quark, soft butter, maple syrup and egg into a smooth dough. Chill it for 30 minutes.
  2. Preheat the oven to 175 °C (155 °C fan) and line two baking trays with baking paper.
  3. Roll out the dough 4 mm thick on a lightly floured surface and cut out 36 stars, hearts or Christmas trees.
  4. Bake the cookies one tray at a time at 175 °C for 9 to 10 minutes each, until the edges are light brown.
  5. Leave them to cool on a wire rack – only then do they firm up.

Good to know

Stars, hearts, Christmas trees: cut-out cookies are the Christmas baking children love most. This quark and almond flour dough hardly sticks and can be rolled out again several times. The orange makes it festive without spices getting in the way.

Swaps

Wholemeal spelt flour → light spelt flour (paler). Maple syrup → honey. Orange zest → vanilla seeds. Low-fat quark → skyr.

Cooking tips

Use a plain whey protein without sweeteners, otherwise the dough tastes artificial. Chill the cut-out cookies for 10 minutes before baking so they keep their shape.

Storage

Keeps for 10 days in a cookie tin.

Allergens

Contains gluten (spelt), almonds, milk (quark, butter, protein powder) and egg.
