Ingredients

Method

You’ll need: frying pan · chopping board · knife · wooden spoon

  1. Pat the turkey breast dry and cut into thin strips. Clean and slice the mushrooms, finely dice the onion and chop the parsley.
  2. Heat the olive oil in a large frying pan over a medium to high heat. Brown the turkey strips briefly all over until they take on colour, then take them out of the pan.
  3. Fry the onion and mushrooms in the same pan until the onion is translucent and the mushrooms collapse, stirring now and then.
  4. Stir in the whipping cream and let everything reduce briefly. Return the turkey strips and let them simmer only until the meat is cooked but still juicy.
  5. Season to taste with salt, black pepper and parsley. Toss once more briefly.
  6. Serve straight away, for example with cauliflower mash or steamed veg.

Good to know

When things need to be quick, this dish is simply a pleasure. Creamy, hearty and on the table without much effort.

Swaps

Whipping cream → Greek yoghurt (more protein, less fat) | turkey breast → chicken breast (similar protein content) | mushrooms → oyster mushrooms (more texture, some fibre) | olive oil → ghee (stable at high heat for frying)

Allergens

Contains milk from the whipping cream; usually suits children well if mildly seasoned, and suitable during pregnancy as long as the turkey breast is cooked through completely and all ingredients are fresh.
