Ingredients

Method

You’ll need: frying pan · saucepan · chopping board · knife · wooden spoon

  1. Cook the rice in lightly salted water until fluffy and tender.
  2. Cut the chicken breast into strips. Finely dice the onion and slice the mushrooms.
  3. Heat the ghee in a large frying pan and brown the chicken all over until lightly coloured. Then take it out of the pan.
  4. Fry the onion and mushrooms in the fat left in the pan until the onion is translucent and the mushrooms take on colour. Stir in the cooking cream and let it reduce briefly.
  5. Return the chicken to the pan and season everything with salt and pepper. Leave to sit briefly so the flavours come together.
  6. Sprinkle with parsley and serve with the rice.

Good to know

A meal like this just feels good when you want something satisfying and easy. Creamy, savoury and everyday-friendly, without feeling heavy.

Swaps

Chicken breast fillet → turkey breast fillet (lean, similar protein content) Ghee → olive oil or avocado oil (more unsaturated fats, stable at high heat) Cooking cream → skyr or Greek yoghurt 0–2% (more protein) Rice → wholegrain or brown rice (more fibre, nuttier)

Allergens

Contains milk from the cooking cream and ghee. During pregnancy the dish is generally fine as long as everything is cooked through; for children, season mildly.

Frequently asked questions

Which nutrients are in chicken breast?

Chicken breast mainly provides protein, plus niacin, vitamin B6, phosphorus and selenium. It's a lean cut that cooks quickly, so don't let it overcook.

What do button mushrooms bring nutritionally?

Button mushrooms contain B vitamins, potassium, phosphorus and selenium, among others. They also bring fibre and natural compounds such as ergothioneine.

Does onion contain FODMAPs, and who should keep that in mind?

Yes. Onions contain fructans, fermentable carbohydrates that some people limit on a low-FODMAP diet. If that's you, try the green part of spring onions instead.

How is ghee different from butter?

Ghee contains much less lactose and milk protein than butter – only traces. It still comes from milk, so take care if you have a real milk protein allergy.

What does rice provide besides carbohydrates?

Rice mainly provides starch and, depending on the variety, small amounts of B vitamins and minerals such as magnesium and phosphorus. White rice is usually milder and has less fibre, while wholegrain rice keeps more of the outer layers.
