Ingredients
1 wrap (without added sugar or seed oils)
100 g cottage cheese
¼ avocado
¼ cucumber
4 cherry tomatoes
1 handful of rocket
1 tsp chilli flakes
1 pinch of salt
1 pinch of pepper
Method
You’ll need: chopping board · knife
Lay the wholemeal wrap on a board and spread the cottage cheese evenly over it, leaving a small border free.
Thinly slice the cucumber, halve the cherry tomatoes and cut the avocado into thin slices.
Arrange the cucumber, cherry tomatoes and avocado in the middle of the wrap and add the rocket on top.
Season with chilli flakes, salt and pepper and press the filling down lightly.
Fold in the sides of the wrap and roll it up tightly from the bottom so everything holds together well.
Cut the wrap in half and serve straight away.
Good to know
When things need to be quick, a wrap like this is worth its weight in gold. Fresh, creamy and with enough bite that it doesn't taste like a compromise.
Swaps
Cottage cheese → skyr cream cheese or plain cottage cheese (similar protein content, often a little less fat). Avocado → hummus made with olive oil (more fibre and a little iron). Rocket → baby spinach (milder flavour, contains folate). Wholemeal wrap → lettuce leaves or a high-protein wrap without seed oils (fewer carbs, often more fibre).
Allergens
Contains milk and, depending on the wrap, gluten; usually suits children well, but then it's best to leave out the chilli flakes. During pregnancy make sure the ingredients are fresh and well washed and the cottage cheese is pasteurised. Contains: gluten.
