Ingredients

Method

You’ll need: stick blender

  1. Leave the espresso to cool completely so the base doesn't turn too soft later.
  2. Stone the dates and blend them with the cottage cheese until smooth and creamy.
  3. Mix the almond flour with the cold espresso until you have a slightly moist base you can shape.
  4. Spread the almond flour mixture flat in two glasses and press it down lightly.
  5. Add the cottage cheese cream on top and smooth the surface.
  6. Dust the dessert with raw cacao and chill before serving.

Good to know

If you love tiramisu but want something a little more everyday, this is a nice shortcut. Creamy, gently sweet and with a subtle coffee note. A fridge dessert without much effort.

Swaps

Almond flour → ground hazelnuts (similar nutrients, with vitamin E and unsaturated fatty acids). Dates → ripe banana (more mildly sweet, a little more potassium). Cottage cheese → skyr (also protein-rich, usually a bit smoother). Espresso → lupin coffee or decaf coffee (less or no caffeine, with a similar roasted flavour).

Allergens

Contains milk and almonds. Because of the caffeine, the coffee note makes it only partly suitable for children; during pregnancy a small portion is usually fine as long as you keep an eye on your total caffeine for the day.
